Easy Potato Casserole

This is a simple dish that you can put together in a few minutes and then throw in the oven for an hour and forget about it.  I love making this alongside another baked dish such as my Roasted Turkey Legs.  The simple flavors of butter, olive oil, onion and thyme accent the potatoes without overpowering them.  Enjoy.

Layers of onion and potato make a simple hearty side
Ingredients:
2 baking potatoes, washed and sliced thin
2tbs butter, melted
2tbs extra virgin olive oil
1/2tsp thyme
sea salt and fresh ground black pepper
1 yellow onion, sliced
1 tsp minced garlic

Directions:
1. Preheat your oven to 375F.  In a saute pan, heat a pat of butter and oil and saute onions and garlic until soft and translucent.  Pour at the bottom of a casserole dish.
2. Layer your potatoes, overlapping (see picture above), and in a circular pattern.  In a small bowl, combine melted butter and oil.  After each layer of potato, use a basting brush to brush the tops of the potatoes with the mixture.  Sprinkle with thyme, salt and pepper.  Repeat with each layer (I had 2 layers.  It's going to depend on how big of a casserole dish you are using).
3. When done, cover the top with foil and bake for 1 hour or until potatoes are very fork-tender.  Serve warm, pulling some of the onion from the bottom to the top for serving.
