Sirloin Stew with Adobo and Tomatoes

Have I been in the mood for beef or what?!  I threw this together one morning because I wanted to use up some cheap sirloin steak I purchased at Walmart and didn't feel like making a trip to the store for anything fancy.  It was amazing.  It's basically a Mexican flavored stew with beef and tomatoes.  In the morning, I threw everything in a crock pot, turned it on high, and it was done by lunch.  Simple.  Delicious.

This is sure to be a staple in my house this winter!

Ingredients (serves 2):
1lb top sirloin steak, trimmed and cut into 1" chunks
2tsp minced garlic
1/2tsp cumin
1tbs apple cider vinegar
1 can diced tomatoes
1tsp oregano
1tsp fine sea salt
1/2 onion, chopped
cilantro, for garnish

Directions:
1. Throw everything in the crock pot.  Give it a good stir and you're done!  Turn on high and let it cook 3-4 hours or until the beef is nice and tender.
